My ladies group had to have a huge amount of apples sliced and ready for dipping into carmel sauce the next day. We did not peel the apples, but cut them into wedges, removed the seeds, put them in a bowl and then poured canned pineapple juice over them. They were just like fresh cut the next day and you could not taste the pineapple. This was a tip from a woman who caters parties.

Both can be kept from browning in the fridge by packing them in liquid in gladware containers. Put your apples in a little bit of water, or if you don't mind a little extra sugar put them in apple juice. Same thing for pears...and it really tastes great if you put your pears in pear juice because it softens them!

Apply an acid to them you can use "Fruit Fresh", or even sqeeze juice from a fresh lemon on them.
