I love fish- here is some of my favorites- there is a great group on line at Yahoo. I mix nontraditional drinks with my foods, to clean the palette and absorb more flavor..
Taliapia- white light and will absorb any flavor (not too fishy).
I eat this fish at least twice a week. I use Cajun to just butter garlic and my favorite is saute on my the gas grill. Tall glass of iced tea
Trout- Best fish to any butter sauce with stuffing's of crab/oyster/shrimp with Dirty rice. room temp-A red wine- Lone star native Texas- Giddings Texas.
Salmon- Grill on a BBQ with hearty seasons like "jerk" or "Cajun" with grilled veggies (zucchini, yellow squash, or veggie ca-bob) I love a tall glass of Limonaide. {Lemon & Lime mixed with sugar water-tart and perfect with this fish}
Tuna- I like it baked with Lemons/Lime with mixed salads with lots of raw stuff with a sesame/ginger dressing, French bread or baguette with a fruity white wine (like a dessert wine).
Catfish fried with a mustard base/corn meal mix and hush puppies FRIED deep and dark- yummy with some cocktail sauce with horseradish enough to flare ya nose, with a cold beer.

Great tasting fish that doesn't have the fishy taste is Hokie. Hokie is served at Red Lobster for the fish that is on the children's menu, so it doesn't make the kids learn to hate fish. Talipia is also a wonderful fish that isn't too fishy. Good Luck
