FREE STONE PEACHES-these are best because the stone comes off freely from the fruit.an easy way to peel peaches for canning is put them in boiling water for a few seconds-- the skin comes right off.

Clingstone are the best, but freestone are good too - and easier - just a bit soggier when cooked, so don't cook freestone too long.

Faye Elberta's.......just bought a case yesterday need to let ripen...they were 15.90 a case that's in ND they hold up better to canning..
