they wouldn't be a crispy...probably a little drier

Your cookies would be dry and the texture would be HORRIBLE!! The butter is used to create the crumbly or flaky texture as well as provide flavor. If you want to cut back on the fat use applesauce instead of butter. or half butter half applesauce that way the moisture is still there

What I often do in recipes is substitute part of the butter with plain yogurt - less calories and really nice texture.

they would not be as moist
for sugar cookies try one batch if they don't taste good add more butter into the rest of the batter
