When making home made vegetable soup, you should use either Chicken bullion or beef bullion. I put 2 bullion cubes per recipe. I also add 1 tablespoon of Italian seasoning, 1 tablespoon of parsely flakes, or a bunch of fresh parsley chopped, and a hand full of chopped fresh celery leaves.

I like to put in a clove of garlic.
I salt it lightly.
Instead of black pepper, put some red or green pepper in the soup.
A drop of tabasco will do.
Sometimes a tablespoon of ketchup or soy sauce will give it a boost!
Herbs such as parsley or dill can give the soup some flavor.
I think that the flavor of your soup is a personal thing!

Both are good for you, each fruit/vegetable has different vitamins. And so as more variety, as better. Vegetables have generally less sugar than fruits.

i use chicken bouillon cubes and cavendar's greek seasoning then i let the vegetables, tomato's, etc. do the rest!
