Apple Pancakes
Yield: 6 servings
2/3 c Flour-unbleached,unsifted
2 c Apple slices
2 ts Sugar
3/4 c Butter/margarine
1/4 ts Salt
2 tb Sugar
4 Eggs beaten (lge eggs)
1/4 ts Cinnamon
1/2 c Milk
Sift together the flour, 2 tsp sugar and the salt. Beat eggs & milk together. Gradually add flour mixtu, beat until smooth.
Saute apples in 1/4 cup of butter until tender. Mix 2 Tbsp sugar and the cinnamon together. Toss with apples. Melt 2 Tbsp butter in a 6 inch diameter deep fry pan.
Pour in the batter to a depth of a about 1/4 inch. when set place 1/4 of the apples on top, cover with more batter. Fry pancake until lightly brown on both sides.
Keep warm and repeat procedure until all batter and apples are used up.

Cheddar Pancakes
Serves 6 (4 3-inch pancakes per serving)
8 oz Mild Cheddar, shredded
3/4 Cup Sour Cream
3 Large Eggs, beaten
3/4 Tsp Salt
1-1/2 TspThyme, ground
1/2 Tsp Mustard Powder
2 Tsp Unsalted Butter
2 Tbsp All-Purpose Flour
Instructions:
Set out a heavy skillet. Put the shredded Cheddar Cheese in a bowl and add the sour cream, and eggs, mixing well after each addition. Add the all-purpose flour, salt, thyme, and dry mustard, which have been mixed well in a separate bowl.
Melt the butter in the skillet over low heat and drop the batter by teaspoon into the skillet.
Cook over medium heat until lightly browned on the bottom. Loosen the edges with a spatula, turn and lightly brown the other side. Serve at once.

Maple Pecan Pancakes
Serves 4 (4 Pancakes per serving)
3 Seconds Nonstick Cooking Spray
1/2 Cup Eggbeaters
1/3 Cup Heavy Cream
1 Tsp Maple Extract
1/2 Cup All-Purpose Flour
2 Tsp Sugar Substitute (recommended: Splenda)
1 Tbsp Wheat Germ
1/4 Tsp Baking Powder
1/8 Cup Pecans, chopped
Instructions:
Grease a griddle or large pan with nonstick cooking spray and heat over medium heat.
Mix all the ingredients, except the pecans, in a blender for about 15 seconds. Stop and scrape down the sides with a spatula, and continue mixing for another 15 seconds until well blended.
Pour approximately 16 mini-cakes onto the hot griddle, and sprinkle each with a few pecans. Cook on each side for 1-2. Serve hot with melted butter or top with 1 Tbsp of Fresh Whipped Cream.

Sausage Brunch Casserole
Serves 8
10 (2.5 oz links) Pork Chorizo Sausage, casings removed
1 (8 oz pkg) Crescent Rolls
1 (8 oz bag) Mozzarella Cheese, shredded
4 Large Eggs, beaten
3/4 Cup 2% Milk
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper
3 Seconds Nonstick Cooking Spray
Instructions:
Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Preheat oven to 425ºF.
Coat a 9x13 inch baking pan with nonstick cooking spray. Lay crescent rolls flat in the bottom of the pan. Combine cooked sausage, cheese, eggs, milk, salt and pepper; pour over crescent rolls.
Bake for 15 minutes, until bubbly and rolls are baked.

Sausage, Egg, and Cheese Scramble
Serves 4

Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove from pan, drain and chop into bite-size pieces; set aside.
While sausage is cooking, beat eggs and milk together. Pour eggs into skillet used to cook the sausage. Add cheese and cook until eggs are set. Stir in sausage and serve warm.

Sausage Gravy .... Easy Peasy and Southern Style
Take one pound of ground sausage and brown up in a large skillet.
When well browned, sprinkle about 3 tablespoons of flour over all.
Stir this around for a few minutes.
Pour in about 12 ounces of milk, stirrring constantly. You will probably need some more milk. Add a little at a time until the gravy is as thick or thin as you want it. Season with salt and pepper. Serve over toast or biscuits that have been baked and sliced in half.
Hints: If your sausage is in skins, you will have to remove the skins and break up the sausage.
Most American sausage is pretty lean now. Therefore I add a few tablespoons of cooking oil to the sausage as it cooks.

Yes, they are soooooo good. But preparing breakfast like that can be difficult.
I would recommend that you use INSTANT PANCAKE Mix..When I was 12, I would make instant pancakes all the time. It was easy, quick, and tasted great.
Sausage is good--but is Veeeery hard to make Gravy. Even experienced professional cooks know that Gravy is tricky and difficult. (I cant make gravy)
I would recommend that you just buy Turkey Sausage Links (do you have those in the UK?) I dont like the "smoked" ones, just the regular ones
.If you have a Cast Iron pan, place the sausage in tha pan with a little oil--and put them in the oven on 400 degrees. That will fry them
Fried Turkey Sausage & Pancakes are soooo good!
You can top the pancakes with strawberry jelly or syrup.

I'm glad to share my grandmothers recipe with you. First buy the type of ground sausage you prefer not links. Cook the ground meat till done, remove from the pan. There should be some fat left in the pan if not add a little bit of oil. To the pan add about 4 tablespoons of all purpose flour and stir around till it absorbs the fat in pan. Add salt and pepper to taste and the sausage meat then add water to cover stirring all the while. If it is to thick add more water if to thin let it boil down a little. This can be poured over biscuits (not cookies) toast or what ever you like. It's is very good my family loves it.

Pancakes/Waffles
Mix it all together; there may be small lumps
Drop by 1/4 cups [or so] onto a hot pan
Cook until bubbles appear, then flip and cook until lightly brown
Serve with butter and maple syrup or other toppings you like

Pancakes - with chocolate chips [Sprinke chocolate chips before turning the pancake]
Potatoes - home fries or hash browns
Sausage gravy is white sauce mixed with breakfast sausage that has well-browned and broken into small chunks.

We have a grain mill so we make our own pancake flour from Kamut. It is so naturally sweet and nutty flavored that regular wheat pancakes taste like cardboard in comparison. It has the added advantage that the germ and its oil is included so it is healthy food as well.
Our mill is made by Ktech - the link below describes it. Unlike most mills it has no stones and can grind the finest cake flour. It is also self cleaning - a big plus with me. You might contact the maker and see if they have 220 50 cycle machines for England
As for your gravy fry sausage and when cooked remove the sausage and add flour and milk to the drippings. Use a sage sausage or maple sausage.

8 buttermilk biscuits
3/4 pound of sausage (fatty sausage works best for this)
4 cups of milk
4-6 tablespoons of flour
Prepare biscuits as instructed on package. Brown sausage in skillet. As soon as sausage is completely brown, turn to medium heat. Add flour by the tablespoon, stirring constantly. Let the flour turn BROWN before adding another tablespoon (if you don't, your gravy will taste like flour). After you have added enough flour to mske the gravy as thick as you like, add milk and stir with whisk.
Serve over biscuits.
I also add pepper.

Well I think along with pancakes and sausage you have to have scrambled eggs and bacon. I will say that everyone who has ever tried my eggs think they're the best scrambled eggs ever. The trick is is to beat the eggs until most of the egg white is gone (little clear spots appear when mixing with yolk). You wont get all of the whites blended completely but beating for a few minutes will make all the difference in the world. I also add about a teaspon of milk or cream. They are yummy.

I'm American and surprisingly I don't eat pancakes and sausage LoL...but since you sounded open to ideas and suggestions and want to hear what some of us DO eat...let me share with you :) I LOVE french toast...us Americans usually make it with "Texas Toast" which is SUPER thick and square shaped...you can get that in the grocery store. Another fun thing to try is breakfast burritos...eggs and cheese in burritos...eggs and cheese on english muffins is good too! We call that the "Egg McMuffin" LoL. If you like sausage, you can add sausage to that! Oh...and another very american thing....ketchup on your eggs! Try it in the breakfast burrito.

I don't eat meat, so I am limited in the greasy breakfast department.
My breakfast usually consists of yogurt or juice in the blender with fruit. Very boring. If I want to be bad...an omelette filled with feta cheese, tomatoes, peppers, onions and mushrooms with some spicy salsa on top and a dollop of sour cream. Now, I'm hungry!

I've always wanted to try the American breakfast the biscuits and gravy just sounds so good, all the recipes I've found have ingredients that you just cannot get in the u.k, please feel free to send me any recipes you get I am absolutely dying to try biscuits and gravy
