The Globe Artichoke (Cynara scolymus) is a perennial, thistle-like plant, originating in southern Europe around the Mediterranean. It grows to 1.5-2 m tall, with arching, deeply lobed, silvery glaucous-green leaves 50-80 cm long. The flowers develop in a large head from an edible bud about 8-15 cm diameter with numerous triangular scales; the individual florets are purple.

With regards to America, it was first brought to California by Italians in the 1880s, and is farmed mostly in that state.
The Jerusalem artichoke Helianthus tuberosus is a species of sunflower. The edible part of the plant is the tuber.
The Chinese artichoke Stachys affinis is a species of woundwort. The edible part of the plant is the tuber.

Artichokes are a vegetable. The leaves on the outside only have a bit of "meat" on them, the rest gets disposed. The bit you can eat of the leaves, and the heart taste delicious in garlic, butter and lemon sauce (melted).

They are from the thistle family and are considered to be an aphrodisiac they can be eaten in numerous ways. They need to be cooked to eat they have a horribly bitter taste when raw so they must be cooked by boiling or sauteing. When boiled most prefer to peel them dipping the leaves in mayonnaise, garlic butter, plain butter any type of vinaigrette or salad dressings . To eat you must bite down car fully and scrape the petal across your teeth the meat inside the petal is the part you want to eat, Discarding the remaining outer part . They are also used in pasta sauces, rice dishes and many ways that I don't know of. They are quite delicious and should be tried by all.

They're really good!
You have to cook them in a pressure pot for like an hour or something, then you eat the meaty part out of the leafy things.
Personally, i dip the leaves in some melted butter... oh man, it's so good!

I know a pizza with a piece of artichoke in the middle..... its real tasty!
Otherwise you can have it in sallads, or eat it one leave at the time with some butter....
