I found a few recipes on recipesource.com, which I'll link to below. I'm amazed at the variety. Some use canned chili, others use ingredients like cream of chicken soup or avocados. Who would have thought it?

The last one is the one I'm familiar with, of course - simply blending a can of rotel tomatoes with a brick of molten Velveeta.

If you do some searching of your own - and I recommend it - be sure to search on both "rotel" and "ro-tel" with a hyphen. People have evidently used both spellings in their recipes.

The possibilities are limited only by your imagination. I make a chili dip with rotel, one with cheese, one with beans, and one with ranch dry dressing mix and sour cream (my favorite is this one mixed with the chili dip) another is to use french onion dip and mix rotel in with it. I use rotel tomatoes so much that my kids are freaked out when a regular tomato shows up in the stew! Good luck and good cooking. Nana
