saute it in olive oil and some garlic, add to bow tie pasta, toss, add salt pepper, and Parmesan! delicious

I buy fresh local spinich from my farmers market. Clean it and wipe off with a cloth. Trim the stems if you wish. In a skillet I add some high quality olive oil and let that come to tempature. I add some chopped garlic and the spinich leaves and keep turning them and coat them with oil and garlic for about a minute maybe less. Just until the start to wilt. I take them out and they are very good. I learned this by watching Emeril.

Spanokipita is always good, of course. But for something easier, Borani is one of my favorite spinach (side) dishes. I have made this recipe many times:
10 oz fresh spinach, stemmed and well chopped
1 cup chopped onions
3 scallions, chopped (we used spring onions)
1 garlic clove, minced
1/4 cup olive oil
1 Tablespoon minced fresh dill or mint (1 teaspoon dried)
1/3 cup grated feta cheese
2 Tablespoons plain yoghurt
salt and black pepper to taste
In a covered saucepan, cook the spinach for a few minutes on medium heat, stirring a couple of times, until it is limp but still bright green. In a colander or sieve, gently press out excess moisture. Set the spinach aside.
Saute the onions, scallions and garlic in the olive oil. When the onions are translucent, stir in the spinach and the dill and heat for about 2 minutes. Using a slotted spoon and pressing out any excess liquid, transfer the spinach mixture to a bowl. Stir in the feta and yoghurt. Add salt and pepper to taste. Refrigerate for 1 hour. Serve chilled.
Makes about 2 cups

Make Spanakopita.
Delicious Spinach Lasagna
1 pound ricotta cheese
2 cups shredded mozzarella cheese, divided
1 egg
1 package frozen chopped spinach, thawed and drained
1 teaspoon oregano
1/2 teaspoon salt
Dash pepper
1 zucchini, thinly sliced
1 carrot, shredded
32 ounces spaghetti sauce, divided
12 lasagna noodles, uncooked (or enough to fill pan in layers) 1 cup water
Grease a 9 x 13 x 3-inch pan.
In a large bowl, mix ricotta cheese, 1 cup mozzarella cheese, egg, spinach, oregano, salt and pepper. In a separate bowl, combine zucchini, carrots and 1 cup sauce.
In prepared pan, layer 1 cup sauce, 3 of the noodles and half of the ricotta cheese mixture. Add 3 more noodles and the zucchini/carrot/sauce mixture. Continue with 3 more noodles and remaining ricotta cheese mixture. Top with remaining noodles and sauce. Sprinkle with remaining 1 cup mozzarella cheese. Pour water around the edges of the pan. Cover tightly with foil and refrigerate overnight.
To prepare, preheat oven to 350 degrees. Bake, covered, for 60 to 70 minutes. Let stand 10 to 15 minutes.
Servings: Serves 12.

over low to medium heat, put a little olive oil in a saute pan mince two cloves of garlic and toss it into the pan, throw the fresh spinach in the pan as well and put a lid on the pan. Let it cook for about 3 min and then stir, once the spinach is wilted, sprinkle some feta cheese on top and put the lid on just until it melts. It is delicious!

Ground Beef and Spinach Lasagna Rollups
2 servings 1¼ hours 35 min prep
1/2 lb lean ground beef
1/4 cup chopped onions
1 (14 ounce) jar commercial pasta sauce
1 egg, beaten
3/4 cup ricotta cheese
2 tablespoons grated parmesan cheese
2 teaspoons dried oregano
1 teaspoon dried basil
1 1/4 cups shredded mozzarella cheese
4 cooked lasagna noodles
1 cup fresh baby spinach leaves, washed and stems removed
In a skillet, add the ground beef and onion; cook over medium-high heat until beef is no-longer pink; stir often and crumble beef while cooking; drain well.
Add in 1/2 cup pasta sauce; stir to combine.
Take skillet off of burner.
Spread 3 tablespoons pasta sauce in an ungreased 8-inch square glass baking pan.
In a bowl, add egg, ricotta cheese, Parmesan cheese, oregano, basil, and 3/4 cup mozzarella; stir to mix.
Spread 1/4 of the ricotta mixture, spinach leaves, and beef mixture over each lasagna noodle.
Beginning with the short side, loosely roll each noodle.
Place seam side down in baking dish.
Top rollups with remaining pasta sauce.
Cover with aluminum foil.
Bake at 350° for 30-40 minutes or until bubbly and heated through.
Take off foil; sprinkle with remaining cheese.
Bake 2-4 more minutes or until cheese is melted.
Let rest for 5-10 minutes before serving.

Creamed Spinach Casserolle
---------------------------------------
6 ounces cream cheese ~ softened
2 ~ 10 ounce package each frozen chopped spinach, thawed and well drained
1/2 cup fresh mushrooms ~ thinly sliced
1/4 cup milk
1/2 teaspoon lemon pepper seasoning
1/3 cup crushed seasoned croutons
Preheat oven to 350°. Mix cream cheese, spinach, mushrooms, milk and seasoning until well blended.
Spoon mixture into 1 ~ quart baking dish; sprinkle with croutons.
Bake for 25 to 30 minutes or until heated through. Makes: 4 to 5 Servings.
Great Substitute;
Prepare as directed, using Neufchatel cheese, 1/3 Less Fat than Cream Cheese.

If frozen, defrost, get rid of excess liquid. Mix with ricotta cheese, add a little salt n garlic. Spread on boneless chicken breasts, roll it up and bake in the oven for 30-40 mins till chicken is cooked. Yum!

I make all my salads now with spinach..I never use lettuce anymore.
I also make a spinach dip in a loaf of sourdough bread.
CRUNCHY SPINACH DIP (WITH SOURDOUGH BREAD)
10 oz Spinach, frozen cut; thawed
8 oz Water chestnuts; drained &-finely chopped (optional)
3/4 c Scallion; chopped (optional)
1 pk Lipton Country Vegetable-soup mix
1 1/2 c Sour cream
1/2 c Mayonnaise
1 Loaf round sourdough bread
In a medium bowl, or whatever you have, combine all ingredients except the bread; mix well. Cover and chill overnight. Pour into hollowed out, unsliced sourdough bread. Serve with the hollowed out bread, cut into sqaures, and raw vegetables.

.Pound chicken breast as flat as you can get it. Spread some spinach and cheese of your choice, on each breast. Roll up the chicken and place in a baking dish. Cook about 30 minutes, till chicken is done. You can marinade the chicken before hand if you want to. You can also put spinach in Lasagna.
