I prefer not to use olive oil because it gives the cake an olive taste. I have found that chocolate cake and olive oil does not taste very good and I had to throw the cake out. You will also find that olive oil stinks as it is baked in the oven. Good cooking sources for olive oil is with vegetables. I have not tried meats with olive oil yet.

Yes, but olive oil is heavier and much more expensive. The batter may reflect the consistancy. You will have a heavier batter and a much costlier cake. I think there are a lot of merits for using olive oil. However, I'm not sure, it's the best for making cakes. Think about it: If olive oil were to be used within a cake - someone would have a receipt for it by now! The reasoning is probably its consistancy and it's cost!!!!!

The natural antioxidants (such as vitamin E) in olive oil help to keep baked items fresher for a longer period compared to items baked with butter.

I have never used oil at all to bake a cake.However i have used olive spread and i cant taste it in the cake.

Yes indeed. For baking use the light olive oil, and remember that three tablespoons of olive oil is equal to a quarter cup of butter.
Hmmm...I would not use it in butter cookies, or poundcake recipes though as the primary flavor you are looking for in those recipes is butter.

I only use pure corn oil because it is the only one that doesn't change the flavor of any of the foods I cook with it.
Actually all oils can be interchanged with each other but the flavor is changed and you have to have an acquired taste for it.
