Whatever you do, DON'T say any stereotypes like "nice guy". Those can start an argument because they are double meaning statements (when you say "You are a nice guy but..." you mean "I like you but you don't turn me on") and he will wonder why if you consider him "nice" why you won't date him. (the nice guy/jerk paradox which stems from misinterpretation, stating non physical attributes that are attractive and making men think that looks don't count or mannerisms, morals etc.)
Be upfront and say something like "You are a good person to know but unfortunately you are not my type." (or something to that effect)

That's an easy one. Just say that he's a nice guy, but you're not interested in him romantically. Simple as that.
