For starters:
Pig in blanket
Raw veggie plate
cheese n crackers or crackers w/ dip

Main course:
Grilled salmon
stuffed cornish hens
stuffed pork chops

Desserts:
Sorbet
Cheesecake
Tiramisu

Starters:
Salad w/ light dressing
Soup; either hot or cold
*Bread; hot with butter or Olive Oil and seasoning
AntiPasta

Mains:
Chicken - either baked 1/4 chicken OR grilled over pasta or spag. squash
Beef - Roast of some type OR stakes
Fish - Tuna/Salmon poached or grilled OR MahiMahi/Talipa baked or fried
*Veggie`tardin - Fresh veggie medley steamed w/Tofu stirfried
Sides to all the above: Rice Piloaf OR Baked Potatoe+ Steamed Veggies

Desserts:
Cake: Any kind
Sorbet: Any kind
Fresh Fruits

Drinks:
1. Water (include lemon wedges)
2. Coffee (reg and decafe)
3. Hot Tea (Green, white, and decafe)
4. Cold Tea (sweet and unsweet)
5. Soda/Pop ( Coke, Pepsi etc etc )

I think your question is about HOW to serve, instead of what to serve.
So, it depends on where you are serving the food. Did they put their meal requests in ahead of time? Is it possible for people to have a little table tent, or card in front of their plate, so you know which entree they choose?
Starters should be served by waiters milling around, or communal starters placed in the middle of each table.

ive done that for my wedding its easy it really depends on what time of year if its summer you want to serve every thing hot if its winter you want to serve them every thing thats cold
