Normally it means you must consume in 3 days once the jar had been opened....however they have to make sure that this information is present on their products to cover their own backs. I have kept Jars in the fridge once opened and consumed a week or 2 later and it was fine.

Just make sure you keep them refridgerated!

It is eat within 3 days of opening the jar on the pasta sauce I get. Once you let air in it will go off quicker.
If the jar hasn't been open then you go by the sell by date.

If it is just tomato paste alone it will last for ever. Anything with a PH of 4.3 or lower is safe for open storage. In that it is a vey high acid content food and will not support the growth of bacteria that causes food born illnesses.

But introduce anything into the sauce and now you have trouble. Say meatball in the jarred sauce. you now a media for bacterial growth.

The "shelf life" of many things vary - I'd say that if it is "canned" (lid sealed by vacuum) the product has a long "shelf life". I've never noticed any pasta sauce product that only has a "shelf life" of (3) three days - how was it made, where exactly did you run across this produce? I would buy non of it for I look for "things" that have longevity.

Most packaged food are given generous use by dates in order to avoid people getting food poisoning then sueing the company that makes it. I don't think it is a scam intended to get you to buy more but I also think that you are right to be sceptical about the length of time before the sauce is no longer safe to eat.
My advice is just to use your common sense, if it looks alright and smells alright then it is probably OK to eat.
Of course it is your own fault if you get sick after eating something that is past its use by date.

Possibly, but not always.

If the sauce is organic and has no perservatives, then it will indeed go bad very quickly.

And sometimes some products are best tasting when consumed immediately, and rather than have you risk thinking their product is crap because you let it sit too long, they will make the expiration dates pretty short to ensure you consume it at peak quality.

After you open it, pasta sauce goes bad pretty fast. I always toss it after a couple of days to avoid eating moldy sauce.

Yes but No.what they are doing is giving you a best before date to save there *** in case you get food poisoning and you turn around and sue them and by law they have to use these dates but depending on what it is it can last well over the best before date as long as you stick to instructions like once open keep refrigerated and stuff like that.Take bread for eg. it is meant to be left in a average temperature but won't last very long but if it is in the fridge it can last weeks before it gets mould on it
