We have troubled him for eleven days so we immerse him to give him some rest and peace of mind so that he can get over the trauma of coming to this earth for eleven days and tolerating all the crap of this world

Mostly the idols are made of clay, they are installed before they are worshipped for which certain religious rituals are required, which means to bring the Power (shakti) into the idol. After the pooja ceremony is over there is one more ritual by which the Shakti is released from the idol. Since the idol is worshipped to avoid its defecation in the long run it is immersed. there is nothing rong if it is kept and maintained.

Ganapathy absorbs all evil around us in those days with us, and, with immersion, takes away all the evils with Him!

This is to indicates that anything made of made of materials/ wordly things decays, gets destroyed eventually and its constitutents would have to get disolved to meet their origin. Soul never gets destroyed and takes another body.
