Yes, in my opinion he could do that without many problems, just like he did in the first fight.

Quinton Jackson is a lot more skilled and complete fighter than Chuck Liddell. The win he got in their first match was no fluke. The fight went on for almost 15 minutes. They were striking throughout the entire first round (which is 10 min. in PRIDE as you know) and Liddell couldn't do anything, he was loosing at that point. And when Quinton got him on the ground midway through the second it was all over quickly. Many UFC fans will say how Liddell has improved and how he knocked out his last 7 or 8 opponents. Well I think that knocking out wrestlers and grapplers whose stand up skills are basically non existing is hardly evidence of how improved his kickboxing is since then.
The fact is though that Quinton hasn't been the same since those two fights with Silva and horrible beatings he took there (but not many people would even consider continuing MMA career after something like that), but I believe that he is still good enough to deal with Liddell, and if they were to have a rematch I think that Rampage would get him once again. Fight would, in my opinion probably go just like the last one and end up in similar fashion.

There were some really incredible arguments in previous answers, how Quinton is too old for instance even though he's 9 years younger then Chuck, and how Mauricio "Shogun" Rua couldn't even think about competing with Liddell which is probably the stupidest thing I ever heard.

And to answer the second part of your question Quinton left PRIDE this year and signed for WFA (World Fighting Alliance), which has recently been getting some really incredible fighters and rapidly gaining popularity among MMA fans all around the world. He had his last match on their "King Of The Streets" event on July 22. and won a decision against Matt Lindland in what turned out to be one of the most exciting matches of the year.

Im with dk, rampage had a good fight and chuck had an off fight, chuch has beaten all of his former victors save rampage, rampage lost his contract with pride and was picked up by the world fighting alliance, and won a close desicion to a mediocer competitor, matt lindland. Rampage has taken several steps backwards in his game while liddell has forcefully moved up. the iceman would crush rampage in a rematch, his only real test is Vandaile Silva which is his next fight, if chuck can overcome such contender as silva then he truly is the best light heavywieght in the world. In their first fight dana white comentated and was shocked long before the fight was called because chuck didnt go in and stick to the gameplan set before him, it was a new arena, new crowd, new rules. but he is such a veteran now rampage doesnt stand a chance

Quiton wouldn't have a shot in beating Lidell again. He beat Chuck in Nov. of '03. Liddell hs improved since then. Rampage still fights for Pride. After wining against Chuck, he lsot to Wanderlei Silva (same day as the fight with Chuck) and has fought 8 fights since that day. His most recent fight was against Matt Lindland on July 22, 2006 in WFA "King of the Streets". (He won.)

He's fighting in the World Fighting Alliance right now. He recently defeated Matt Lindland via split decision. Rampage of today can't beat Lidell of today. Rampage before the injury that side-lined him for like 6 months can beat Liddell cause he hasn't been the same fighter since.

Nope. Chuck has just gotten better and better. I hope there is a rematch sometime so Chuck can prove how great he's gotten since their last fight.

No way. Mauricio Rua kicked Rampage's butt, and there's no way Rua could think about taking on Lidell.
