Other "books" were added later

look up "midrash"
"gemara"
" mishnah"

the Torah means two things.

first the first five books of Moses

also the collected works of the Jewish religion this includes the "OT" the Mishnah, Talmud, as well as writings up today are all considered part of the Torah.
