Mass transfer deals with the movement of material through a medium, like a drop of ink spreading out in water. There are two kinds, convective (stirring) and diffusive (molecular mixing).

Boundary layers exist in fluid flow, heat transfer and mass transfer. It is essentially an area near a surface or interface where the transfer process is inhibited. The relative sizes of these layers change the overall rate of transfer.

This is a big field and I'm just scratching the surface here.
