My boyfriend loves cherry pie. I want to bake him one for his 20th birthday. I've never made any pie before, but I'm good at cooking pretty much anything. I have a recipe for a cherry pie and it calls for fresh cherries that I need to pit myself. My Dad says I boil the cherries? Is that right? I have the directions for everything else, just not exactly what I do with the cherries before I bake them. What do I do? *~Thanks!~*

In my opinion, you are better off using cherry pie filling. It tastes better. It looks better too.

I grew up with three huge cherry trees on our property and my mother made fresh cherry pies, at least 25 each year to freeze so I know how to make cherry pies at least with sour cherries which was what our trees were. The following recipe is what my mother used and what I use now. In our opinion it's a winner :) Almond extract is what most people use but my girls prefer the vanilla, simply a matter of choice. Also when you bake a pie always have a larger pan beneath it so that run overs which occasionally happens won't end up on the stove. Also if you notice that the outer crust is browning too quickly when it reachs a golden brown put aluminum foil around the edges of the pie to protect the outer crust from browning further and possibly burning.
Fresh Cherry Pie
1 (9 inch) double crust pie shell
4 cups fresh cherries; pitted
1 1/3 cups sugar
1/3 cup all purpose flour
1 ts almond (or vanilla) extract
1 Tbls butter or margarine
whipped cream (optional)
1. Line a 9-inch pie pan with pastry.
2. Combine cherries, sugar, flour, and almond or vanilla extract.
3. Pour into unbaked pie shell and dot with butter. Cover with top crust and seal edges.
4. Sprinkle top crust with small amount of sugar. Cut slits in center of crust to allow steam to escape.
5. Bake at 400° about 40 to 50 min or until done. Serve with whipped cream if desired.

4 cups fresh or frozen tart cherries
1 to 1 1/2 cups granulated sugar
4 tablespoons cornstarch
1/8 tablespoon almond extract (optional)
Your favorite pie crust or pie dough recipe for 2 crust pie
1 1/2 tablespoons butter, to dot
1 tablespoon granulated sugar, to sprinkle
Place cherries in medium saucepan and place over heat. Cover. After the cherries lose considerable juice, which may take a few minutes, remove from heat. In a small bowl, mix the sugar and cornstarch together. Pour this mixture into the hot cherries and mix well. Add the almond extract, if desired, and mix. Return the mixture to the stove and cook over low heat until thickened, stirring frequently. Remove from the heat and let cool. If the filling is too thick, add a little water, too thin, add a little more cornstarch.
Preheat the oven to 375 degrees F.
Use your favorite pie dough recipe. Prepare your crust. Divide in half. Roll out each piece large enough to fit into an 8 to 9-inch pan. Pour cooled cherry mixture into the crust. Dot with butter. Moisten edge of bottom crust. Place top crust on and flute the edge of the pie. Make a slit in the middle of the crust for steam to escape. Sprinkle with sugar.
Bake for about 50 minutes. Remove from the oven and place on a rack to cool.

Don't boil them. Wash and drain them, remove the stems, slice them and remove the pits with a spoon. You'll get the hang of it by the time your done. If your recipe calls for canned cherries packed in syrup, you may need to add extra sugar to your fresh cherries. The fresh cherries will make a better pie, but you must like your boy friend a lot to go through all that trouble. That will probably change after you are married for awhile.

Double Cherry Pie
Yields: 8 servings
"Twice the cherry goodness--dried cherries and frozen cherries make a tangy pie! Tart canned cherries, well drained, can be substituted for the frozen cherries."
INGREDIENTS:
4 cups frozen cherries, thawed
1 cup dried cherries
1 cup white sugar
2 tablespoons quick-cooking
tapioca 1/2 teaspoon almond extract
1 recipe pastry for a 9 inch
double crust pie
1/4 teaspoon ground nutmeg
1 tablespoon butter
DIRECTIONS:
1. Combine frozen cherries, dried cherries, white sugar, tapioca, and almond extract in a large mixing bowl; mix well. ( It is not necessary to thaw cherries before using. ) Let cherry mixture stand 15 minutes.
2. Line a 9 inch pie pan with pastry. Fill with cherry mixture. Sprinkle with nutmeg. Dot with butter or margarine. Adjust top crust, cutting slits for steam to escape.
3. Bake at 375 degrees F (190 degrees C) about 1 hour, or until crust is golden brown and filling is bubbly. If necessary, cover edge of crust with aluminum foil to prevent overbrowning.

You should listen to your dad. Cherry pie can be made with fresh cherries and not cooked but they taste much better when cooked a bit before mixing and adding a little almond extract to the mixture. Most of the recipes I have call for canned cherries and therefore they should be cooked first..

Yes boil them. Take the pips out of your cherries and then put them in a pot with a little sugar (about 2 tablespoons) also add about a 1/4 cup of water and simmer (boil on low) for maybe 10 minutes it may take longer up to 20. Then they are ready to use. Just make sure they are tender or easily cut with a knife or spoon. The other thing you could do is to buy a couple of cans of pitted cherries and just put them in the pastry you have. Good luck.

the fast and easiest way to make cherry pie is to buy cherry pie filling, if it is too tart you can always had sugar till it taste just right for you.
then buy the pie crust already made you find them in the dairy dept. near the eggs.
this is the way I do my cherry pie

No, I don't think you have to boil the cherries before because they will cook while baking, just like the apples in an apple pie!
