Cut cold butter and shortening into other dry ingredients. When it looks about the size of pea gravel - some pieces the size of peas, but most smaller - Start adding tablespoons of ice water one at a time until it just binds together. Push it into a ball and wrap in plastic and let it sit in the fridge at least 20 min. or up to a couple days if making it ahead. Makes great pastry, people will think you're a genius. I was watching a chef the other day on PBS and she adds cream cheese to her crusts. I dont remember why, though. Her specialty is baking.
