This morning I was walking in the kitchen looking in the fridge and the toaster behind me popped. My whole body twitched and like freaked out. It was just bread. What caused this reaction?

It is nothing more than survival instinct. Every human has this built right in. Some train to bring it to the surface, but sometimes it happens to everyone.
You probably weren't quite awake & the sudden noise was a wake-up call of primal nature that activated your fight or flight response. Be glad you have it....someday it might just save your life. It did mine.

This is an exaggerated startle response, and if it was just this once, I would not worry about it, but if it is happening a lot, then may be you have an anxiety disorder, you should seek the help of a professional if it is bothersome and if you have other symptoms/problems that are similar.

I don't know but I'm that same way. Any time someone pats me on the back or touches me and I'm not expecting it (and many times when I am expecting it) I jump like they scared the crap out of me. I don't know why but I just do. If you find out let me know.
