This may have to do with the way the cheese has been preserved. You may be allergic to these ingredients.

Most cheeses are derived from the milk actually spoiling - and some cheeses, like Bleu Cheese or Roquefort, actually have mold IN them. Perhaps its the cultures or the mold you're sensitive to. If that's the case, go to an allergist and get some tests done - it might just save your life if that's the case, since penicillin (used to be - and may still be) made directly from food molds... wouldn't it suck to have an allergic reaction to an antibiotic?!

Lots of cheeses using some kind of food coloring in their products...non-organic cheeses are more likely to use food dyes to color cheese and food dyes cause a lot of allergies in people.Organic cheese uses either no added color(cheddar cheese is naturally off white) or a natural food coloring which is a lot less likely to cause allergy problems.

You do know they put stuff in cheese that you might be allergic to,Right? If you don't you know now. If I'm wrong go to your doc.

Very well could be that yeast or mold that is present in cheese that is not in milk. Also there some more complex enzymes in cheese that is not in milk.

You probably do have an allergy to milk/lactose. Your reaction is just not as severe.
