We do them up like this: Brown the chops on both sides and remove from the pan. Slice THREE onions thinly and caramelize them. (add a pinch of brown sugar to have them brown faster) Put chops back on top of the onions. Add 7 dashes of Worcestershire sauce and a cup or a bit more of any kind of stock. Cover and simmer for 1/2 hour. Then, uncover and let it reduce for 15 minutes or so. You can thicken the gravy with a roux or cornstarch. You could add a can of mushroom soup at this point if you wish as well. Serve over mashed potato or broad egg noodles- yummy... We do corn and a salad on the side. But if I made it today, it would be brussel sprouts cause that's what we have.

You can cook them with barbeque sauce or steak sauce. I think I will eat mine with hotsauce, mashed potaoes, corn, and rolls tonight. They're also good with gravy, mashed potatoes, and green beans and rolls. My mouth is watering as we speak. Funny we're both preparing pork chops tonight. Oh, baked or fried is good. Fried when cooking with gravy.

Sprinkle your chops with garlic powder, pepper & italian seasoning, brown quickly in olive oil and finish with a few minutes in the oven. Make garlic bread and salad, and ta da! I do that with steak too.

Smothered Pork Chops with Potatoes

* 6 thick pork chops
* 2 tablespoons vegetable oil
* 1 cup white wine, or broth
* 4 potatoes, thinly sliced
* 2 large onions, thinly sliced
* 1 teaspoon dried leaf thyme
* 1/4 cup (4 tablespoons) minced fresh parsley, divided
* 2 cups beef broth
* 1/2 cup soft bread crumbs, tossed with 2 tablespoons butter, melted
* 1/4 teaspoon dried leaf thyme
Brown pork chops in oil. Increase heat and add wine, scraping up browned bits. Place pork chops in baking pan; pour in pan juices. Top with potatoes, 1 teaspoon thyme, and 3 tablespoons of the parsley. Pour beef broth around sides. Cover tightly with foil and bake at 350° for 30 to 40 minutes. Take out of the oven and sprinkle with buttered bread crumbs and remaining parsley and a little more thyme. Put back in oven and bake for about 5 to 10 minutes longer, until crumbs are lightly browned.
