For reference, here are some of the easy foods that I already like to make:

tuna sandwiches
eggs
baked potatos
canned soups

I don't mind cooking as long as it's as easy as throwing a potato into the oven and turning it on, but when I need to do any more than that it just sits in the freezer for months until I throw it away.

Please share your super-fast easy and healthy meals for the rest of us lazy bastards :)

Smoothies
PB&J
Taco salad - black beans, cheese, and salsa over chips
Egg salad sandwiches
Fruit salad - just put together whatever you have
Pizza (use french bread/a pita/biscuits, throw on some tomato sauce, cheese, & a few toppings, and stick it in the oven for 15 minutes - YUM!)
Mac-n-cheese - mix in some tuna fish (I'm vegetarian & don't eat this, but it's supposed to be good)
Frozen waffels with fresh fruit
Kashi cereal & bananas

Now I'm getting hungry...

How about crustless quiche? Chop up your fave veggies really quick (myabe 2 minutes) throw them in a pie plate - add about 5 eggs and a cup of milk blended together - maybe some cheese - bake until set. About 350 for about 30-45 minutes, depending on your altitude.

Very fast, very easy, very good.

Or chicken - take boneless skinless chicken breasts (or whatever other cut you like) and put them in an oven proof pot with a lid. Add chicken stock from a can (or two) to cover. Bake for between one and two hours (it depends on how many chicken breasts you have in there - I do a box of about 6 or 7 at a time so I have leftovers, and enough stock to cover them) at about 350. The result is the moistest tastiest chicken ever. You can use the broth that's left over to cook rice or veggies in. This can be turned into a casserole by adding uncooked rice at the start and adding extra water and broth - but I prefer just the chicken.

Top Ramen Noodles, throw in some left over meat and canned or frozen veggies.

Now where do you get left over meat if you don't cook?
Beef -- steak, easy to cook just broil it 3 minutes side, don't eat it all so you have left overs. (if you serve it with veggies use those with the top ramen.

Beef-roast, put a rub all over it or garlic salt/powder. Cook in a 350 degree oven, 20 mins a pound. Eat it with mashed potatoes (boil cut up potatoes for 20-25 minutes-or microwave for 4 or 5 minutes. Mash with a little milk and butter).

Now you have leftovers for easy dinners.

Well this recipe calls for like 10-15 minutes. Get some super thin rice noodles, lettuce, spinach, cucumbers, seaweed, and kimchi (pickled is fine), boil water, put in the rice noodles, and toss your favorite veggies, buy a nice yummy ASIAN sweet and spicy sauce. Then the noodles are done, put them in a bowl and drizzle with sesame oil, then put the veggies on top and either lightly pour a little of the sauce on top or use it for dipping (I use it for dipping)

Great summer time dish, easy too, AND DAMN STRAIGHT HEALTHY! Believe me, I'm a lazy bastard, but this is too damn easy and I have enough patience for it.

LOL! You're funny, man. I keep lots of stuff around thats easy to just pick up and eat. Apples, all kinds of fruit, those packages of raw veggies already washed and cut up and a bottle of ranch always in the house. I think someone else mentioned rotisserie chicken from the grocery store, once you get used to that, you realize how bad KFC sucks. Also check out the deli, they will have lots of pasta salads and stuff you can just take home and heat up.

I like stuffed spinach salad stuffed Peta bread

Chicken deli meat
sharp cheddar
Spinach
sliced strawberries/or tomato's
a little bit of italian or ranch dressing
+any other veggies you have

Take all this mix it together stuff it into a pita pocket and you have a health fast and convenient lunch.

Even my husband the junk food junkie likes these. I know it sounds odd to use strawberries but it really tastes good you should try it.

A bag of pre chopped coleslaw...toss in a non stick pan with about 3/4 cup water and add a can of chicken. Let cook just about 5 minutes till it is warm but still crunchy..Yummy and healthy too!

Scrambled eggs or an omlette with some peasant bread toasted with a bit of garlic and olive oil and a lovely fresh salad with veggies............mineral water over ice with some lime or lemon or some lovely hot Jasmine tea!

How about lemon, lime, grapefruit,vinegar or onion juice added to a glass of water. Just the right sour taste to match your attitude.
