Sierra Club Knowledge Cars - Granite Gourmet is where I started...want to try some at home before out on the trail.

Ramen is an easy meal for the backcountry, and quick cooking, but a bit dull (especially if you make it a staple). Make it seem more like dinner by adding dehydrated sliced mushrooms (rehydrated separately in hot water for 15 minutes), dried corn, grated carrot or cabbage (add to boiling water with noodles), or other dried vegetables. Seasonings like dried ginger, onion or garlic powder, and curry powder are good. Smoked salmon on top is a special treat. Look for unusual ramen brands in health food stores (try them at home before you pack them) - some come with fewer artificial ingredients, in vegetarian versions, and with more interesting seasoning packets. (Japanese versions are sometimes called udon.) Asian stores also carry a mix of sesame seeds and seaweed that is an excellent addition to ramen.

Some of the MRE's are very good, of course everyone's taste varies so I would get several that you thought sounded good and give them a try at home first...

There are other dried pasta mixes you can find at any local grocery. I forget the brand but they come in many more varieties than just macaroni and cheese. Also, cereal bars in addition to granola bars taste pretty good... sometimes too sweet though. Of course, creating your own granola mixtures can be pretty tasty.

depends on how many days you're going to be out there. i usually buy those ready to eat meals at the sporting goods store. i bring power bars and beef jerky, beef jerky is great to get some protein and salt back into your system.

i don't like complicated food when i'm backpacking. this is as simple as it gets. don't forget to bring lots of water unless you have a filtration system.
