CHEESE RAVIOLI SOUNDS GOOD !!!

I like to serve this with mixed veggies

Chicken Parmesan
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

I'm not even going to answer that but I had a thought I would like to convey. Not so long ago there was a show on TV called 'HEE HAW'. On the show (a stand up comedy family type entertainment), there was always a group voice asking " Grandpa Jones" --Grandpa, what's for dinner? Then, of course, the grandpa would cite a long list of southern home cooked vittles. Sometimes the dinner menu was rather extensive! The group voice would respond,"YUM YUM".--- Grab some chips.

chicken cobb salad

Ingredients:
4 Whole chicken breasts -- skinned & boned
1/4 pound bacon
1 avocado -- sliced
1 large beefsteak tomato -- diced
2 ounces Danish blue cheese -- diced
Your favorite Italian dressing


Directions:

Cook chicken breasts, either poach or bake. Cut chicken into large bite-size pieces. Cook bacon, drain it well, and crumble. Mix chicken, bacon with avocado, tomato and blue cheese. Coat with dressing and mix well. Flavor of salad is better if dressing gets a change to soak in for an hour or more.

ALL AMERICAN DELUXE CHEESEBURGERS
2 tbsp mayo
2 tbsp spoonable Thousand Island dressing
1 pound lean ground beef
8 slices American cheese
4 kaiser rolls, split and toasted
4 large lettuce leaves
1 large tomato, sliced
4 slices purple onion
12 dill pickle slices (optional)

Preheat grill.

In a small bowl, mix together mayonnaise and salad dressing; set aside.

Shape meat into 4 patties. Grill patties over hot coals 3 to 4 minutes on each side or to desired doneness. Top each patty with 2 cheese slices; cover. Continue grilling until cheese is melted, about 2 minutes.

Spread 1 tablespoon reserved dressing mixture on each roll. Fill with cooked hamburgers and top with lettuce, tomato, onion and pickles as desired. Serve immediately.

Stove top method: Cook patties in skillet on medium-high heat 4 to 6 minutes on each side or to desired doneness. Place cheese slices on top after patties are flipped and melt while patties finish cooking.

I presume this is an evening meal? Well, one of my favorite anytime foods is eggs! How about a fried egg sandwich with some thinly sliced onions, freshly ground pepper and some mustard. Or a peanut butter & bacon sandwich.........some spicy chili......a fried baloney sandwich....a super salad & garlic toast. You should stock your pantry with the stuff you enjoy so you'll always have something enjoyable. Of course there's the standard fast food fare.....if you want to stay in, Chinese delivery is always a yummy option. :)

Grilled cheese (with or without) pickles and a bowl of tomato soup.

Or maybe a PBJ with a glass of milk and some chicken noodle soup.
Good, soothing comfort foods for a late meal.
