They take dehydrated potatoes & shred them up & press them into little forms that are in the shape of the tater tots.
I love the little things. I buy the onion tater tots & chop them up & make has browns for breakfast !

They bash poor defenseless baby potatoes over the head and kill them. Then they run their lifeless bodies through a giant grater and shred them. Then they add some chemicals, to keep them fresh and hold them together. Then they put them into a mold and squish them into tot shapes. Then they drop them in boiling oil, stick them in a plastic bag and expect us to eat them!

After trimming potatoes for french fries, the leftovers are minced and then pressed into the little cubes, then fried and baked and bagged.
