Because, over millions of years, the creatures to whom dirt tasted bad avoided it, and survived -- and had descendants who inherited a distaste for dirt. But any creatures that ate a lot of dirt (because it tasted great to them), died young from eating all that dirt, and so they didn't have a lot of descendants. Therefore today's creatures (including us) all think dirt tastes bad.
