dad's spicy buffalo wings
INGREDIENTS:
* 5 pounds chicken wings, separated at joints, tips discarded
* 4 cups vinegar-based hot pepper sauce
* 1/4 cup butter
* 6 tablespoons blue cheese salad dressing
* 3 pickled cherry peppers, thinly sliced
* 1/2 onion, finely chopped
* 1/2 teaspoon freshly ground black pepper
* 1/2 teaspoon crushed red pepper flakes
* hickory wood chips
DIRECTIONS:
1. Preheat an outdoor grill for medium-high heat. Soak hickory wood chips in water.
2. Use a large pot that can be placed on the grill to combine the hot sauce, butter, blue cheese dressing, cherry peppers, onion, black pepper, and red pepper flakes. Stir until well blended, and place on the grate of the grill. Bring to a simmer, and cook for 15 or 20 minutes.
3. Sprinkle some soaked chips on the hot coals. Place chicken wings on the grill, and brush generously with sauce. Grill, turning and basting frequently for 20 to 40 minutes, or until meat is no longer pink and the outside is brown and crispy. Serve with lots of cold drinks!

Chicken (wings, legs, your preference)
Texas Pete Buffalo Sauce
Sticks of Butter
You want to cook the chicken first. Bake the chicken in the oven at 375 degree's. When the chicken is almost done, begin the sauce.
In a large pot, place enough sauce and butter to allow the chicken to be submerged. I use 1 stick of butter for every 12 oz. of Texas Pete sauce.
Add the chicken into the pot and heat on a low heat for several hours. A small amount of bubbling should be noticable. How long will decide how tender the chicken comes out.
When your ready to eat, spoon the chicken out, noticing the tenderness of the meat and how it may separate from the bone. Too long may make all of the chicken fall apart though
I use Ranch for dipping.

Wings
2 lbs chicken wings (about 12 wings)
3 Tbsp butter, melted
4 Tbsp bottled hot pepper sauce (like Crystal or Frank's Original)
1 Tbsp paprika
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon black pepper
Blue cheese dip
1/2 cup sour cream
1/2 cup crumbled blue cheese
1/2 cup mayonnaise
1 Tbsp white wine vinegar or white vinegar
1 clove garlic, minced
1.Cut off wing tips (discard or reserve for other use such as making stock). Cut wings at the joint. Put chicken wing pieces in a plastic bag. Set aside. Food safety note: when cutting raw chicken it is best to use a cutting board reserved just for cutting raw chicken. Wash thoroughly when finished. Do not let raw chicken juices come in contact with other food.
2 Create a marinade by stirring together the melted butter, hot pepper sauce, paprika, salt, cayenne pepper and black pepper. Pour all but 2 tablespoons of the marinade over the chicken pieces in the plastic bag. (Reserve marinade for coating after the pieces come out of the oven.) Seal bag and let marinate at room temperature for half an hour. When marinating is finished, drain marinade and discard bag.
3 Place wing pieces on the rack of a broiler pan. Broil 4 to 5 inches from the heat for about 10 minutes on each side, until chicken is tender and no longer pink. Remove from oven and baste with reserved marinade.
Serve with Blue Cheese Dip and celery sticks. Makes approximately 24 pieces (about 12 appetizer servings).

These are crunchy, spicy, deep fried wings. This recipe came from Buffalo, New York. Make a lot because they are very good. They are eaten very quickly.
Time to make 45 min 20 min prep
5 lbs chicken wings
1 cup Frank's red hot sauce
3/4 cup margarine
cooking oil(enough to deep fry)
1. Cut wings apart into two pieces.
2. Heat cooking oil in deep fryer.
3. Add wings and cook until brown & crispy.
4. Meanwhile, combine hot sauce and margarine and heat together until margarine is melted.
5. Dip wings in the sauce and enjoy.

Hunt down one flying buffalo, wrestle him for his wings, wash and dry them, melt a stick of butter then chop up some cilantro (east indian parsely) and add that to the butter, rub all over the wings, tabasky snauce them up and fresh ground pepper and sea salt them and bake on 375 f for an hour, until they are nice n crispy =)
My man invented a really yummy side order from 3 parts mashies with 1 part refried beans and tabasco sauce/butter! mix it all up and HARF it! woooowza

what I call buffalo wings are simply wings marinated in hot sauce, then deep fried and doused with hot sauce again. Best if eaten while hot.
