Aside from visual appearance would be cost.

a bay most of the time is a 3 window unit that forms a 45 deg angle to each other ..middle one straight with the wall and the 2 on side at 45 deg to it.....

a bow is curved.......

A bay window is staight from side to side. A bowed window curves. if you can afford it, get the bowed. much cooler.
