Ugh!
I have the best honeybutter recipe ever, and do you think I can find the dang book? No! It isn't where it should be on the shelf. So here's what I do when I am not following the great recipe.
I use 2 parts butter to 1 part honey. If the consistency is too runny, I add more butter to firm it up a little bit, but I also taste it as I am mixing it to make sure it tastes good, and sometimes it needs a little more honey. Also, the one thing I do remember from my recipe book is to add a few drops of vanilla in there--it really enhances the flavor.
Just a few tips:
Use an electric mixer for best results. It's just too hard to blend it well by hand.
Warm your honey a little bit to make it easier to work with: I don't put it in the microwave, which makes it so hot it will melt the butter, but rather put it in a cup, then set the cup in a bowl of warm water.
Make sure your butter is at room temperature. If it is right out of the fridge, it's too hard to blend, and if you melt it, it's too runny, and makes a mess.
Put it in the fridge to help it set up nicely after you have made it. You can make a big batch and keep it in there for a long time.
Good luck!

Sure, been doing it for years! But you have to use real butter, not margarine (that stuff is only one molecule away from plastic.) Take one stick of butter, dump it into a small bowl and let it come to room temperature. Start adding your honey, a small amount at a time, using a whisk to blend it up. When it reaches the right consistency, thicker than cake batter, taste it to see if it is sweet enough. If not, add more honey, a small amount then keep checking the taste until you get it where you want it. Put a lid on the bowl and keep it on the table or in the fridge, either one. Will keep for weeks. I hope this helps.

Sure...commonly known as honey butter. You can do the same thing with dark molasses. Both delicious on warm biscuits.
Beat UNSALTED room-softened butter until it's smooth.
Add honey or molasses a little bit at a time, mixing into butter after each addition.
You'll know when it's the way you want it...just stick your finger in and lick. Use a different finger each time though...no double-dippers allowed. (^@^)
Refrigerate in a covered container.

Yum, honey butter.
Try 1/4 cup softened butter and 2-3 tablespoons honey.
Mix them together and cool so the butter will firm up again.

if you want it runny try 2/3 honey to 1/3 butter if you want to chill it and make it more solid again for spreading then reverse that.
