Fried Apple Pies

These fried apple pies are made with refrigerated biscuits and dried apples.
INGREDIENTS:
8 ounces dried apples
1 cup water
1/3 cup sugar
1 tablespoon butter
1 can (10 ounces) refrigerated flaky biscuits
vegetable oil, for frying
PREPARATION:
Combine apples and water in saucepan; bring to a boil. Cover, reduce heat, and simmer for 30 minutes or until tender. Remove from heat and let cool, mashing slightly if pieces are large. Stir in sugar and butter; set mixture aside.
Roll each biscuit into a 5-inch circle on a lightly floured surface. Place about 2 tablespoons apple mixture on half of each biscuit circle. To seal pies, dip fingers in water and moisten edges of circles. Fold in half, making sure edges are even. Using a fork dipped in flour, press edges firmly together to seal. Pour oil to a depth of 1/2 inch into a heavy skillet, or use deep fryer. Fry pies in hot oil (370°) over medium-high heat golden, turning once. Drain well on paper towels.
Makes 10 little pies.

Fried Apples

6 to 8 mediium apples - cored and cut in wedges
2 T. butter or margerine
1/3 cup brown sugar - more if using very tart apples.
1 tsp. cinnamon
optional - dash of nutmeg
2 or 3 T. water
Preparation -
Melt the margerine in the skillet, over medium heat. Add the apples and saute for about 10 minutes. The apples should be fork tender but not overly soft. Do not overcook or you'll have applesauce. Over medium-high heat, add the brown sugar, then a few tablespoons of water to caramelize the apples. Toss gently just until all the apples are coated. Remove from heat. Stir in the cinnamon and nutmeg (if using).

Serve warm as a side dish in place of a vegetable, or over ice cream as a dessert.

The cooking time and the amount of brown sugar varies according to the variety of apple you are using. Use can use any variety, but fried apples are best when made with a firm apple like red or yellow delicious.

PREPARATION:
Cover dried apples with water; simmer, covered, for 30 to 40 minutes. Drain and let cool.

Sift together flour, salt, and baking powder; cut in butter. Add eggs and milk; mix to form a soft dough. Roll dough out thin and cut into 4 circles about 5 inches in diameter.

Combine nutmeg, cinnamon, and sugar.

Place 1/2 cup dried apples in the center of each circle, sprinkle with 1 teaspoon of the sugar mixture, then fold over.

Fried Pies
2 cups flour
1/2 cup shortening
1 tsp salt
1/2 cup ice water
Mix together, roll out, I use a saucer for a templet, cut around with pizza cutter. put your filling in the center, fold top over & press down with fork tines, after this I use pizza cutter to make even cuts all around the pie you will have no lose ends.

Filling
Peel & core & slice 6 to 8 apples, cook in pan with a little flour & sugar & butter & cinnamon, I never add water, plenty of juice in apples, cook for a bout 10 minutes, After you fill dough pockets, Cook in hot oil till golden brown, lay on paper towels to drain, while hot sprinkle with cinnamon & sugar mixture. makes 8 pies.

These freeze really nice, too. This is really a good recipe. I always make plenty & then put half in freezer, I do a double recipe everytime. good luck.

Do you mean the fry pies that are made so often in the south? If so they are quite easy to make you need to buy a can of biscuits, oil, and apple pie filling.
Open the biscuits and flatten with a rolling pin. Heat oil. Fill each flattened biscuit with a spoonful of the pie filling, fold in half then with a fork seal the edges. It should have a half moon shape. Then fry in the hot oil until browned. When done sprinkle with powder sugar, plain sugar, cinnamon sugar or a powdered sugar glaze. Hope it's what you wanted.

An amazingly easy and good recipe is get some good quality, chunky applesauce (I usually have my own, or have cut up a peeled couple of apples with sugar and cinnamon, cooked till tender and let cool a bit) then get a tube of ready- to-bake (Pillsbury) crescent rolls, open it up, separate the sections and put some apples on each section, fold over, press down the edges to seal, and bake for about 20 mins. Drizzle with powder sugar/water mixture or just top with pwdr sugar and serve warm with ice cream. I am a baker, and a great cook, but this, was really, really good!

Don't know about frying these, I only baked mine...Just think, less calories if you bake them!

Fried Apple Pies

2 tablespoons butter

1/2 teaspoon ground cinnamon
Pinch of nutmeg
1/4 cup sugar
1/4 cup light brown sugar
1 1/2 cups water
Juice of 1/2 lemon
1 teaspoon vanilla
1 tablespoon cornstarch
3 cups flour
2 teaspoons sugar
1 1/2 teaspoons salt
1/4 teaspoon baking powder
6 tablespoons lard or solid vegetable shortening
1 egg
3/4 cup milk
Powdered sugar in shaker
2 scoops vanilla bean ice cream
Fresh sprigs of mint

Preheat the fryer. In a sauce pan, melt the butter. Add the apples and saute for 2 minutes. Stir in the cinnamon, nutmeg, 1/4 cup sugar, and brown sugar. Continue sauteing for 1 minute, stirring constantly to dissolve the sugar. Add the water and lemon juice. Bring the liquid up to a boil. Add cornstarch dissolved in 1 tablespoon water. Whisk the vanilla and slurry into the liquid. Reduce the heat to a simmer and cook for 15 to 20 minutes, or until the apples are soft. Remove
from the heat and cool completely. In a mixing bowl, sift the flour, sugar, salt and baking powder, together. Cut in the lard until it resembles coarse meal. In small bowl, whisk the egg and milk together. Gradually add the egg mixture to the flour mixture, working it to make a thick dough. Break the dough into 12 equal portions. On a lightly floured surface, roll the dough pieces into thin rounds, about 5 inches in diameter. Put 1/4 cup of the mixture in the center of each round, fold over and crimp the edges with a fork. Fry the pies, two to three at a time, in the hot oil, until golden brown. Remove from the oil and drain on a paper-lined plate. Powder the pies with powdered sugar. Lay the pies on a platter and serve with vanilla bean ice cream. Garnish with drizzle of caramel sauce, powdered sugar and fresh mint.

You can make fast dough by buying the large Grands biscuits in the refrigerator aisle of the grocery store and rolling them flat before filling with apple filling. Make sure the apple filling has cooled before filling pastry.
