I have tried to make it but it just dont have that unique taste like when you buy it out

My mom has a wok that she uses to make the fried rice. She puts in a little oil in the wok, a few pieces of fresh garlic and ginger; do not burn or it will be bitter. She then adds a sliced sweet asian sausage; when you go to an asian store the sausage is bright red, chicken, shrimp and thinly sliced carrots. Mix well until sausage is almost cooked. She then adds chopped up green onions and peas. Next she adds regular rice and mixes. She then takes 3-4 eggs and beats in a bowl. She adds the beaten eggs over rice mixture. Stir until the eggs are cooked. She then will add soy sauce and adds some salt seasoning.

You do not have to add the sausage or chicken with the recipe. If only shrimp, add carrots before the shrimp.

4 ounces frozen uncooked shrimp, unshelled
Marinade:
1 tablespoon oyster sauce, or to taste
1 tablespoon soy sauce, or to taste
1 teaspoon salt, or to taste
Pepper to taste
1 teaspoon cornstarch mixed with 1 1/2 teaspoons water
Other:
4 ounces cooked ham
1 medium onion
2 green onions
2 eggs (more if desired)
1/2 cup peas
4 cups cold cooked rice
4 to 5 tablespoons oil for stir-frying, or as needed
PREPARATION:
Run the frozen shrimp under warm running water, pat dry with paper towels, shell and devein. Chop into small pieces. Add the marinade ingredients and marinate for 15 minutes.
Dice the ham, onion, and green onion.
Beat the eggs lightly with chopsticks, add a dash of salt, and mix.* Set aside.

Heat the wok and then add 1 tablespoon oil. When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once. Cook the other half the same way. Cut the egg into thin strips, and save for later.
Add 2 tablespoons oil, or as needed. When oil is hot, stir-fry the onion and shrimp on high heat for a few moments, remove and set aside. Do the same for the green peas, and then the diced ham.
Add 1 - 2 tablespoons oil, turn the heat down to medium and stir-fry the rice. Add a bit of soy and oyster sauce if desired. Add the other ingredients except the egg and green onion and combine thoroughly. Serve the fried rice with the strips of egg on top and the green onion as garnish.**
*You can also add a bit of oyster sauce if desired
**Alternately, you can mix the green onion and egg in with the other ingredients.

Shrimp Fried Rice

Ingredients:
1/4 lb cooked Shrimp, chopped
2 Eggs
2 Tbsp Vegetable Oil
3 Green Onions and tops, chopped
3 cups cold cooked Rice
3 Tbsp Soy Sauce


Directions:

Blend eggs with 2 Tbsp water; set aside. Heat oil in wok or large skillet over medium heat. Add green onions; stir-fry 30 seconds. Add eggs; cook, stirring gently, until firm. Stir in rice and cook until heated, gently separating grains. Add shrimp and soy sauce; cook, stirring, until mixture is well blended and heated through. Makes 4 to 6 servings.

5 cups cooked and cooled rice
one medium onion diced
3 cloves of garlic diced fine
1 cup of frozen peas and carrots thawed
4 eggs scrambled and cooked and cooled chopped small
2 cups shrimp sauted in butter or margarine and garlic salt
sesame oil
vegetable oil
soy sauce
two pinches of ground ginger

Heat some vegetable oil in a deep skillet, saute the onion and garlic, add rice and stir frequently so as not to burn. When rice is heated well all the way through add about 1/8 cup sesame oil and stir well, add scrambled eggs, vegetables and shrimp, add soy sauce and ginger. Stir and heat everything well. Remove from heat and serve.

I use left over steamed rice when I make mine, can of mix vegetables, scramble egg, just a little soysause and add your shrimp, somewhere I add a little water. Yum..Yum
