A week to two weeks to make the cake and freeze it straight from the oven (it will lock in the freshness) wrap it up real tight in reynolds wrap. Then decorate the day before the wedding (ie ice and all the other things). If you try to decorate it beforehand you will run into problems. Good Luck.

I am a wedding cake maker, and I have to agree with most folks. Freezing it will take away some of the freshness, and change the texture a little bit. HOWEVER, if it is something you need to do, freeze only the cake itself, not any of the filling or frosting. Wrap very well, two to three layers of freezer foil/wrap, and it will be fine for about a month.
Most people don't realize the cakes they buy in stores, that taste sooooo good to them, have been frozen.
All cakes can be refrigerated for about a week and still taste wonderful. Even all decorated and filled, they will be fine. If you have any questions, just contact me. I love talking cake.

If you want it to taste fresh, don't freeze it at any point. The freezer is not kind to the taste and texture. A day ahead would be the best to make the cake without freezing it. But you will very likely not have the time or inclination to do so since you will have so much other stuff going on at that time that also needs to be taken care of.

In some states, you are forbidden by laws enforced by the county health dept so you cannot bring in your own cake anywhere that you have baked in your own kitchen unless you are getting married in your backyard.

My aunt is a baker and is making my cake. She normally bakes the cake one day in advance and REFRIGERATES it. Do not freeze the cake if you can avoid it, thawing the cake may change texture and flavor. The icing is also mixed the day before and the cake is them decorated early the day of the wedding and assembles on site most of the time.

My suggestion in order to avoid decoration mishaps and pressure about the cake is to get Styrofoam rounds and decorate it just like a wedding cake, usually you can find someone to decorate it for you for cheap. It will look just like a cake and no one will know any different. For the actual cake bake a large sheet cake or find a bakery that can bake a sheet cake. Sam's makes great cakes and one cake will serve 100 guests. That way you have one "cake" to look at and the other cake to eat. It can save you a ton of money and time and stress. This has become a very popular choice these days and its just something to consider.

I was a professional cake decorator and did my own wedding cake the day of. But when I was working, I sometimes would decorate the cake the day before and put it in the fridge! Do NOT freeze it because it will need to be thawed out. As long as the cake is fresh the day you decorate it, then it should be fine for a day. I wouldn't go for longer than that. And remember, DO NOT FREEZE IT, REFRIGERATE ONLY!!!!!!!!!!!!!!!!!!!!! And Congrats!!!

My best friend is a baker and she has agreed that when I get married she will make my wedding cake. Her plan is to make the cake no earlier than the Wednesday before the wedding. I wouldn't freeze the cake until after the wedding as that is the tradition.

Im sorry to tell you but,,,, you can't freeze it... at least not the way that you want it and beside i don't think your freezer will hold that much cake..... you have to bake the cake first.... then when the day comes that's when you will have to fix it up... don't forget to put your theme on it..... if is shells put it on the table... if its hearts them place some on the table....

You have to give yourself at least 4 hours before the wedding and that's even if you know what you are doing.... i would work with 6 if i were you....don't forget a check list ... yes for the cake you still need a check list ....

My husband is a pastry chef and made our wedding cake. He started making the flowers for it (they were edible) 2 weeks before the wedding. He made the cake the week of the wedding and finished decorating it just minutes before the ceremony started. It was most delicious and simply beautiful!! So a couple days before the wedding is just fine. Try not to freeze it if you can help it - it will stay much fresher if you just refridgerate.

I am not sure if this helps but my grandmother made the cakes(fruit cake) and we had them professionally iced by the local Safeway.We saved the top piece and froze it and on our 1st anniversary we took it out and let it defrost at room temp. It was great actually better because fruit cake gets better as it ages good luck. When we froze it we wrapped it in stretch film then covered it in foil

I would freeze the cake part without the icing on it. and take it out the day be for the wedding and let it thaw so you can ice it and take it to the wedding the next day. good luck
