You can freeze it about a month before, just make sure that you wrap it very very well so it won't absorb tastes from other foods. Also make sure that it is completley thawed before decorating. If it isn't the moisture from it thawing will make your icing slide right off.

i took a cake class at michaels and if you want to make just the cake (w/o frosting), you take it right out of the oven and wait 10 mins then plop it out and wrap it in plastic wrap and throw it in the freezer (the heat and plastic act as a vacumme so it is like the cake gets vacumme sealed) and it can be good for 3 months like that. then set out to thaw (no microwave or preheat oven, it makes it flaky and eww). if you make a nice iceing receipie and put it in the freezer, it will last up to 3 moths as well. an iced cake will last 3 weeks in a frige and 3 months saran wrapped in the freezer. before iceing your cake, make sure its been out of the oven for at least an hour so the icing doesnt melt to the sides. heres a link my instructor gave us, but i havent been in a while and dont remember what it was like WWW.CAKEMIXDOCTOR.COM
i dont remember the butter cream icing receipie off hand, but with icing you can get different consistancies with the more water added. like we used stiff consistancy (normal receipie), medium (1 tsp), thin (2 tsp). i beleive the thiner your icing, the easier it is to make into words and stuff. there also is another type of icing that doesnt have shortning, and once it is made, it cant be stored. i think this is icing that they use for things like popped up flowers or 3d doves and stuff. so check your recepies. oh, and it is better to have a clean spray bottle with water in it rather than dipping you icing spatula or knife in a cup of water. spray the spatula once on each side, put on glumps of icing, smooth, spray cake all around lightly, spray spatula again, and smooth out cake for a flawless touch.
