Perfect Penne Pasta
This savory, quick dish puts a new twist on old favorites like lasagne. A wonderful blend of penne pasta, spaghetti sauce, ricotta, mozzarella and spinach that melts in your mouth and is a favorite among all ages!
Ingredients
12 oz Penne Pasta
1 Medium or large jar of favorite spaghetti sauce
1 12 oz Container of low-fat ricotta cheese
8 oz Mozzarella cheese
1/2 bag Spinach leaves
Preparation
Preheat oven to 375 degrees.
Fill a stockpot with water and bring to a boil, add pasta reducing heat to medium.
While pasta is cooking, slice mozzarella thinly and set aside.
Cook pasta for 12-15 min, until almost done. Drain and return to stockpot.
Stir in jar of spaghetti sauce, ricotta and spinach (after removing any long stems). Stir well to combine ingredients and transfer to a large baking dish (9x13)
Top with mozzarella slices and cover loosely with foil
Place in oven and bake for 25 min, until inside is heated thoroughly
Remove foil and bake an additional 5 minutes.

Chicken Pasta Alfredo
Serves 6
6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Yummy Yummy Chicken Marsala - Serve over your favorite pasta.
4 boneless skinless chicken breasts
Flour
Kosher salt
Fresh ground pepper
1/2 cup olive oil
3 slices chopped bacon
8 ounces mushrooms
1/2 cup sweet Marsala wine
1/2 cup Swansons chicken broth
2 T butter
1/2 cup chopped Italian parsley
1 clove minced garlic
Fresh sliced or shaved mozzarella cheese
1. Flatten chicken breasts by covering with plastic wrap and pounding with a meat mallet until they are only about 1/4 inch thick.
2. Put 1/2 cup of flour in a small bowl. Season with salt and pepper. 3. Heat the olive oil in a frying pan until the oil is hot.
4. Coat both sides of the chicken pieces with flour, shaking the excess off into the bowl.
5. Fry the chicken in the hot oil for 3-4 minutes on each side until golden brown.
6. Lower the heat to medium, fry bacon pieces in frying pan for a few minutes.
7. Add mushrooms and minced garlic and saute for approximately 5 minutes until brown and moisture has evaporated.
8. Season with salt and pepper.
9. Add Marsala to the pan and cook for 30-60 seconds to cook out the alcohol.
10. Add the chicken stock and simmer for 1 minute.
11. Add the butter. Place chicken back into the pan.
12. Simmer mixture to heat the chicken.
13. Season with salt and pepper. Top with chopped parsley.
14. Serve with fresh sliced or shaved mozzarella cheese.
This will make 4 servings.

Easy Orange Chicken Stir-fry
Made with chile paste and orange juice, this recipe for Orange
Chicken is great for busy weeknights..
INGREDIENTS:
• 4 boneless, skinless chicken breast halves, cut into 1-inch
cubes
• Marinade:
• 2 tablespoons Chinese rice wine or dry sherry
• 1 tablespoon cornstarch
• Sauce:
• 1/3 cup orange juice*
• 2 tablespoons dark soy sauce
• 1 teaspoon sesame oil
• 1 teaspoon brown sugar
• 1/4 teaspoon chile paste
• 1 clove garlic, minced
• 1 slice ginger, minced
• Oil for stir-frying, as needed
PREPARATION:
Place the cubed chicken in a bowl, and add the marinade ingredients.
Marinate the chicken for 30 minutes.
While the chicken is marinating, prepare the sauce ingredients and
the garlic and ginger.
Heat the wok and add oil.
When oil is ready, add the garlic and ginger and stir-fry until
aromatic.
Add the chicken and stir-fry until it changes color. Push up to the
sides of the wok, making a well in the middle. Add the sauce.
Combine the sauce and the chicken. Stir-fry for another minute and
serve hot.
*If you find the orange flavor too overpowering, try substituting a
combination of orange juice and water to make 1/3 cup.

Curry Chicken and Rice Dinner:
1 oven bag (large size -- 14- x 20-inch)
1 tablespoon all-purpose flour
1 tablespoon curry powder, divided
2 cups uncooked quick-cooking rice
1 (7.2-ounce) jar roasted red bell peppers, drained and sliced
1 (14 1/2-ounce) can chicken broth
1 large yellow onion, chopped
1/2 cup raisins
1 teaspoon chicken bouillon granules
4 split chicken breasts, skinned
Preheat oven to 350°. Place oven bag in a 13- x 9-inch baking dish. Add flour to oven bag; twist end of bag, and shake.
Add 2 teaspoons curry powder, rice, and next 5 ingredients to oven bag; squeeze bag to blend ingredients.
Sprinkle chicken with remaining 1 teaspoon curry powder; arrange in an even layer on top of rice mixture.
Close oven bag with nylon tie; cut 6 (1/2-inch) slits in top of bag.
Bake at 350° for 45 to 50 minutes or until chicken is done.
Yield: Makes 6 servings

alfredo is so yummy
here's my favorite recipe for the sauce
1-8 ounce package of cream cheese(I like nefucheal cheese it takes exactly like cream cheese but with less fat and calories, talk about a steal!!)
3/4 cup kraft parmesan cheese(real parmesan works really good to)
1/2 margarine or butter
1/2 milk
dash of garlic powder
8 ounces fettucini
ok, in a large saucepan combine cream cheese, parmesan, margarine or butter,garlic powder and milk
stir over low heat until smooth
add fettucini toss lightly
this is like the best homemade alfredo ever waay better than that stuff from a can!!

2 JARS OF BERTOLLI'S OR FIVE BROTHERS MUSHROOM ALFREDO SAUCE
1 ROMA TOMATO
1 STALK OF GREEN ONION
YOUR CHOICE: 3 CHICKEN BREAST OR BAG OF SHRIMP TAIL ON
grill chicken breast or pan sear shrimp after removing tail
boil pasta
simmer sauce in small pot or shallow pan
dice some green onion
dice roma tomato
remove pasta and drain
in shallow pasta plate
place in this order: noodles , sauce, chicken or shrimp, tomatoes and onions
ITS DELICIOUS!!!!

CHICKEN MARSALA - In a frying pan, butter (melted) sliced mushrooms (Lots). cook until mushrooms start to soften. In a second frying pan cook Chicken (boneless, cut into pieces or strips and coated with flour) in butter, until edges on all sides start to brown. In first frying pan, add finely diced garlic and a generous amout of Marsala wine to mushrooms and heat vigorously for about two minutes, add chicken from second frying pan and cook until sauce thickens (flour from chicken will thicken sauce). To finish, add a spritz more Marsala wine (important, to sharpen Marsala flavor) and serve. - ENJOY

Cheese filled ravioli....topped with home made spaghetti sauce, or ragu if you dont have the time.... mozerella cheese, parmesan cheese, and make some home made garlic toast...with (french bread, real butter or margarine, with crushed fresh garlic, mixed in the butter).....you sprinkle that with parmesan cheese......put in broiler for a few seconds....however long you like it...longer for more crispy garlic toast...it's yummy
