a soup green is celery, and the green of the leek.sliced or diced so it fits on a spoon so it fits in your mouth when you eat the soup.

Chard or Kale -- when chopped and added to soup they remain intact and they add nutrition, flavor, and color.

you buy them in a bag at the store in the produce section - its like carrots, turnips and others all with their tops on.
