Spicy Sausage Soup with Cilantro

INGREDIENTS:
2 pounds hot Italian sausage links, casings removed, and sliced
4 cloves garlic, minced
2 (14 ounce) cans beef broth
1 (14.5 ounce) can Italian-style stewed tomatoes
1 (15.5 ounce) can white hominy
1 cup sliced carrots
1 (14.5 ounce) can great Northern beans, undrained
2 small zucchini, cubed
2 cups chopped fresh cilantro
1 teaspoon ground black pepper
1 teaspoon salt

DIRECTIONS:
In a large skillet over medium heat, combine Italian sausage and garlic. Cook, stirring frequently until sausage is evenly browned. Drain cooked sausage in a strainer to remove grease.
In a large Dutch oven or stock pot, combine the beef broth, hominy, stewed tomatoes, carrots, beans, and zucchini. Bring to a boil over medium-high heat, and boil for 2 minutes. Reduce heat to low, and add sausage and cilantro; simmer for 15 minutes, or until carrots and zucchini are tender. Season with salt and pepper

Olive Garden Zuppa Toscana
1 lb. Hot Italian Sausage
2 large Russet Baking Potatoes sliced in half, and then in 1/4 inch slices
1 large Onion, chopped
1/2 can Oscar Meyer Real Bacon Bits (these are less fatty than real bacon)
2 cloves garlic minced
2 cups Kale or Swiss Chard chopped
2 cans Chicken Broth
1 qt. Water
1 cup Heavy Whipping Cream
Cook sausage in a 300-degree oven. Bake approximately 1/2 hour, drain on
paper towels, and cut into slices.
Place onion, potatoes, chicken broth, water, and garlic in pot, and cook on
medium heat until potatoes are done. Add sausage, bacon bits, salt, and
pepper to taste, and simmer for another 10 minutes. Turn to low heat, add
kale and cream. Heat through and serve

Description This is one classic you do not want to miss. You may wish to add a half teaspoon of fennel seed to this
1 1/2 C. spicy sausage links -- 12
2 medium potatoes, cut in half lengthwise, and then cut into 1/4" slices
3/4 C. onions, diced
6 slices bacon
1 1/2 tsp. minced garlic
2 C. kale leaves, but in half, then sliced
2 T. chicken base
1 qt. water
1/3 C. heavy whipping cream
oven to 300 degrees. Place sausage links onto a sheet pan and bake for 25 minutes, or until done; cut in half length-wise, then cut at an angle into 1/2 inch slices.
Place onions and bacon in a large saucepan and cook over medium heat until onions are almost clear. Remove bacon and crumble. Add garlic to the onions and cook an additional 1-minute. Add chicken base, water, and potatoes, simmer 15 minutes. Add crumbled bacon, sausage, kale and cream. Simmer 4 minutes and serve.

In chicken broth, cook a chopped white onion and sliced potato.
Add crumbled cooked loose hot Italian sausage -- 1 T per serving
When cooked, add 1/4 c instant mashed potato flakes to thicken.
Add a few leaves of chard or kale which have been sliced.
Cook ten minutes more.
Add non-fat half and half, milk, or cream as your diet can handle.
Add fresh grated parmesan and fesh ground pepper to the bowls.
