Correct steel and grinding. All knives are sharp. A knife that isn't sharp isn't a knife, it's a blunt instrument. Strangely, people prefer blunt instruments. They're frightened of cutting themselves. What they don't know is, they're more likely to cut themselves hacking away with a blunt knife than slicing straight through with a sharp one.

When making them they usually "chemically" sharpen them with acids.
