I don't see why not; after all when you make a stew you are drinking the water from the meat and the vegetables. I have heard that one cooks away most of the vitamins from vegetables, what better way to get some back than to drink the water they were cooked in? Think about it... just add a litle salt and pepper and you have a simple soup..

Definitely. When you boil vegetables most of the vitamins end up in the water rather than the veggies themselves. I would recommend steaming instead of boiling then you won't have to drink the water. Unless you wanted to freeze it for a stock later.

I was always told old sea mariners would queue at the galley and give their souls to drink the cooking water of cabbage, perhaps someone might have heard that!! also I also make my gravy with any veg water I'm cooking at the time mixed with granules

Veggi stock is very healthy for you. It has all the vitamin and minerals that are left behind from boiling them out of your veggies.
This stock is a very healthy and tasty addition to any soup or stew. In fact a cup of broth for sore throats, cold or flu is very good for your bod also!

Absolutly ! My Mother used to make me drink it when I was little and undernourished..that is where a lot of nutrients are...just be sure you wash the veggies good first before boiling!

I don't see why not, the vitamins and minerals from the vegetables are in it. That's the only problem I have with cooking vegetables is that they lose their important values.
