My late stepfather used to make this. I found the recipe on line and cook it every now and then.
Spam & Creamy Noodle Bake
6 oz egg noodles (I use the 'wide' egg noodles)
1 cup ricotta cheese
1 cup sour cream
1/2 cup onion, chopped
1/2 cup milk
2 tbs butter, melted
1 egg, lightly beaten
1/4 tsp nutmeg
Salt and ground black pepper to taste
12 oz can Spam, cubed
Preheat oven to 350. Cook noodles according to package directions. In large bowl, mix together the ricotta cheese, sour cream, onion, milk, melted butter, egg, nutmeg, salt and pepper to taste. Add spam and cooked noodles to mixture. Spoon into a greased 2 1/2 quart casserole. Cover. Place in oven 1 hour, stirring once half way through. Uncover for last 10 minutes of baking.
Good luck and good eating.

I used to make this when I was first married and funds were tight:
Place the meat on its side on a cake or pie pan covered with foil. Pat the top with a thin layer of brown sugar (or more if you'd like), then pour a little honey or syrup over it. Bake at 350 degrees for about 30 minutes. Slice and serve with mashed potatoes and a vegetable.
A cheap meal that tastes good too.

I make a sandwich spread with Spam that's not too bad. I grate up the spam mix with Mayo, a little mustard, chopped pickles and onions, grated cheese, and a few shakes of Worcestershire. That's about the only way I can eat Spam.
