For long marrows, cut one lengthways. Scoop out the seeds and discard. Fry some minced beef with onions, perhaps some garlic and tomatoes. Fill the marrow with the meat mix, when it is almost cooked, put some grated cheese over the top and pop it under the grill until the cheese is melted. Sorry I can't remember the temperature to cook the marrow at, and for how long, however I have just found this website that may be of use to you.

Oddly enough, I pickled some courgettes yesterday!
Slice about 2 lb courgettes into rings. Slice an onion. In a pan, heat up about 750ml pickling or malt vinegar and add 12oz sugar and any spices you fancy (dried chilli, mustard seed, celery seed etc.). When boiling, put courgettes and onion into pan and boil for 5 mins. Leave to cool and ladle into old jam jars (if re-using original lids, make sure the vinegar doesn't come into contact, or it'll corrode the metal. Alternatively, you can buy cellophane tops from delis). Leave for a week or so.
They're fantastic with cold meat and on burgers etc. They keep for months!

We got into self sufficiency two years back, like you we have tons of them.
You can pickle them.
The best is to buy some heavily smoked continental sausage.
Fry courgettes (small chunks), onions and smoked sausage together. Add fresh tomatoes and water and bring to the boil.
You will fall off your chair, Brilliant and cheap as chips.
Then you can freeze it for winter
Don't over do it with the sausage you only want small bits, the smoked flavour goes so well with the courgettes its unreal

Marrow cut in half scrape the middle out stuff with ready cooked mince meat and onion, put the halves together tie it with strings and Baked for about 90 minutes on gas 4.

I'm a yank, so I had to search the web to see what you are talking about. Here in the states a courgette is called a zucchini( Zoo-kee-nee). A very tasty bread can be made from zucchini. It can also be grilled with squash, onions (or leeks) and mushrooms.Search the web for recipes.

stuffed marrow is lovely, fry some mincemeat add tinned tomatoes to it with some orregano, salt and pepper, chop an onion in with it, put 1 teaspoon of sugar in with the mince (you should always put sugar in when you use tomatoes it brings out the flavour) scoop out the middle of the marrow put that in with the stuff in the frying pan mix it all together then stuff the marrow with the mixture, wrap it in tin foil then put in the oven for about 30 mins. mmmmmmmmmm its lovely with chips or veg.......ENJOY

maybe you should have planned what you were gonna do wiv loads of courgettes & marrows when you accepted/grew them. sell them on the roadside to passing motorists?
