This is a great oatmeal raisin cookie recipe:

1 1/2 c flour
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1 egg
1 c sugar
1/2 c melted butter
1/2 c melted shortening
1 Tbs molasses
1/4 c milk
1 3/4 c quickcooking oats
1/2 c raisins (optional)
1/2 c walnuts (optional)

sift together flour, baking soda, cinnamon and salt. Stir in remaining ingredients. Drop by the rounded Tbs onto an ungreased cookie sheet. Bake at 350 degrees for 10-11 minutes.

if you want to make it reduced fat, replace butter with oil and take out shortening altogether. Use 2 egg whites instead of whole egg.

hope you try it!!

There is an absolutely great recipe printed in the inside of the top of every box of Quaker oatmeal. For some reason they tell you to use one tablespoon of dough per cookie. A scant teaspoon is about right. I burned a lot of cookies before I invested in one of those two-layer cookie sheets with the air gap in between.

Look on Quaker Oats box, best I have ever made. Add other dried fruits, rice crispies, nuts as you desire. Always come out good. Good luck. Go to Quaker Oat web site.
