We love it as a side dish for anything we happen to be grilling that night. Take spaghetti squash & slice in half length wise. Scoop out seeds & add 1/2 stick butter to each half along with a clove or two of fresh garlic sliced. Bake @ 300 til done, then scoop out the flesh & serve sprinkled with fresh chives....Yummy with grilled pork or chicken!!

SPAGHETTI SQUASH
Serves 4
Provides 3 vegetable servings per person
When spaghetti squash is cooked, the inside takes on a thread-like texture-similar to spaghetti!
1 spaghetti squash (3 cups)
2 cups prepared low-sodium spaghetti sauce
1 cup sliced mushrooms
2 tablespoons chopped parsley
2 tablespoons Parmesan cheese
1. Preheat the oven to 400°F. Wash the outside of the squash and pierce it a few times with a fork. Set on a baking sheet and bake 1 hour or until very tender when tested with a fork. Cool.
2. Cut the cooked squash in half lengthwise and remove the seeds. Take the spaghetti-like threads out with a fork and place in a baking dish. Toss with the low-sodium spaghetti sauce and mushrooms. Cover lightly with aluminum foil. Return to the oven for 20 to 30 minutes or until well heated through.
3. Scatter with parsley and Parmesan cheese and serve with a piece of bread and a salad for a hearty meal. It also makes a very tasty side dish with fish or chicken.

Shrimp Alfredo on Spaghetti Squash (serves 4) Ingredients 1 spaghetti squash 1 pound shrimp, shelled and deveined 1 jar salsa 1 cup plain yogurt 1/2 cup half/half 1/2 cup feta cheese 1/2 cup Monterey jack cheese 1/2 cup parmesan cheese 2 eggs 2 tablespoon oregano 2 tablespoons sweet basil salt and pepper to taste Directions Preheat oven to 375 degrees. Cut spaghetti squash in half; microwave for 10 minutes. When squash is done, remove all seeds and shred squash with fork. Place salsa in the bottom of a 8x8 baking dish. Put a layer of squash on top of salsa. In a blender add half/half, cheeses, eggs, oregano, basil, salt and pepper and blend until smooth. Pour a layer of half and half mixture over the squash; then a layer of shrimp. Repeat each layer until ingredients are gone; ending with the half and half mixture. It sounds great with spaghetti sauce. As a side dish, I like making all kinds of squash real simple. I'm used to doing this with regular yellow squash, I cut horizontally in half. Lay out on flat baking pan. Sprinkle and rub olive oil on top, sprinkle salt, pepper, garlic powder and paprika for color. Broil it for about 10 minutes till when you stick a fork in it - the fork goes right through and doesn't lift the squash up out of the pan. I don't really like food "al dente", I like it tender, but that's a matter of preference. This is just my idea but here's a link specific to spaghetti squash:

Spaghetti Casserole
Ingredients (use vegan versions):
6 oz. Spaghetti
1 Onion
1 Green Bell Pepper
1- 8 oz. Can of Tomato Sauce
1/2 Cup red wine
1 Can Corn (or Frozen)
Tabasco
1-1/2 teaspoon marjoram (or more to taste)
Directions:
Preheat oven to 400F. Cook spaghetti noodles in boiling water. Saute onion & pepper in oil. Add tomato sauce, vegan wine, corn, tabasco (to taste), salt & pepper. Put cooked spaghetti in a greased casserole dish and top with sauce. Bake for 25-30 minutes.
Serves: 6
Preparation time: 45 minutes

1 spaghetti squash, about 1 1/2 lbs.
1 med. green pepper, chopped
1 med. onion, chopped
1 tsp. basil leaves, crushed

Wash squash, prick with fork. Cook in 400 degree oven until tender, about 40 minutes. Cook and stir green pepper and onion with seasoning in oil over medium heat until vegetables are tender. Stir in tomatoes. Simmer uncovered 5 minutes. Cut squash into halves, remove seeds and fibrous strings. Remove spaghetti-like squash strands with two forks. Toss with butter and cheese. Spoon tomato mixture over squash.

I like it cooked, then mixed with brown sugar or maple syrup, then put back in the shell and broiled for a couple minutes, if you put a little brown sugar on top, it crystalizes.........it's very good with poultry.
