When you store potatoes for too long and not cook it, it sprouts out roots. What are these roots for? Are they edible?

These are what farmers call eyes, I have a secret for the people out there if you're going to store potatoes for a long period of time throw an apple in with the potatoes this will stop the growth of the eyes from forming on the pototoes

Yes, the potato is still edible. Just cut off or gouge the roots off before you cook them.

No, they are not edible. However, you can start a 'hill' of potatoes by cutting these roots off, leaving part of the potato and planting in a hill of soil.

That's the potatoes way of growing. It's trying to re-root itself and grow another potato plant.

Yes, you can still eat the potato if it hasn't gone all soft & mushy. Just cut off the roots and prepare as you usually would.

I'm not sure what they are for, or if they are edible, but, our family just cuts them off, then the potato is fine.

I would remove the root and peel the potato first.

the roots grow in a process called vegetative reproduction... if u keep 'em longer, it'll grow into a another potato =p... but i dont think u can eat 'em

potatoes grow from roots,,,i suppose you could eat them but why would you want to..
