If someone puts voodoo on a creature would they know about?

I don't know what creature you may be referring to but you don't put voodoo on anything. Vodou is an African Traditional Religion. Meaning it has its roots in Africa.

If you are talking magic then we may think of Hoodoo which is african folk magic. Many of its practices or roots are based in New Orleans. Many believe the creole people starting using this form of magic because they were unable to practice there religion.
