I'm a teacher and have the same problem. Here are some of the things I do to change up my lunches:
use a partitioned container and put hummus in one section and a veggie and cubed in each of the others. I also put some pita chips in a sandwich bag.
yogurt and fruit (cut up) and a crunchy cereal (I like Grapenuts, but it's just a personal preference) to mix in with it.
sourdough pretzels, cubes of cheese, and mustard with some fruit or applesauce on the side.
a bagel and cream cheese

I got to the point where I hated packing lunches for my daughter. Sounds like you're packing your own. Bummer.
You can always pack a salad in a throw-away bowl.
Salsa and chips is easy and quick.
Cheese, crackers (or chips) and sliced meat.
Cut up fruit and vegetables.
Try inventing different sandwiches other than ham. There ARE other meats! Tuna... egg salad (I know it smells horrible!). Any mayo-based sandwich should be fine until lunchtime. We never had a problem (my daughter is still alive!).
I always packed more than she'd need because I never knew how hungry she'd be by lunch.

First, study your grammar! "School's back .... and so ARE lunches." "I'll have a salad here and there....."

I would suggest, putting warm soup in a thermos. If you get bored with the soup, then make ramen noodles, reheat some leftovers and put them in the thermos, etc.

Seriously, work on the grammar!
