Why does the cold help at all?

The cold slows the breakdown of the food. It slows bacterial and other actions causing decomposition. Food in the fridge will spoil after a while.
Do you know the basics on how the refrigerator works? If you look at the back and underneath of most refrigerators, you will find an electric motor, a compressor and a bunch of tubes going up the back. The compressor compresses (squeezes) the refrigerant (usually a type of freon gas). This causes the gas to heat. The gas's rapid expansion into the tubes causes it to cool, thereby drawing the heat away from the inside of the fridge and cooling the inside.
There are non-electric types of refrigerators that use propane and a flame to effect the same purpose.

Bacteria grows at a much slower rate in cold temperature. Freezing further retards the growth.

Cold stops the bacteria and mold from growing. Hot encourages growth. Freezing stops them from growing altogether

Bacteria do not reproduce as quickly in cold, so the food stays good longer.

The cold kills bacteria... if the bacteria were left alone in a warm area, they would breed and breed and breed and cause all kind of spoilage.
