A specialist species has a narrow ecological niche. Panda bears are a good example. They have a very specific area where they can live and eat only a specific food (bamboo). Many fish and birds are specialist species because of their reliance on a particular food source or needing the water to be within a very narrow temperature range for example. A Specialist species does not respond well to changes in environmental conditions. A generalist species on the other hand is usually very adaptable to changes in environmental conditions, they eat a variety of different foods depending on availability and can live in many different places. Cockroaches, mice, raccoons and people are all generalist species.
