2 cans peas drained
1/2 cup shredded Mexican blend cheese
diced dill pickle
diced onion
mayonnaise
celery salt
mix all together using enough mayo to suit your taste. Easy on the celery salt a little goes a long ways.

Marinated Salad
1 can English Peas, drained
1 can Shoe peg Corn, drained
1 2-oz Pimento, drained and chopped
3/4 cup Celery, chopped fine
1/2 cup sweet Onion, chopped fine
1 tsp. Salt
3/4 cup White Vinegar
1 tsp. Pepper
1 tbsp. Water
1 cup Sugar
In saucepan, combine salt, vinegar, pepper, water and sugar until sugar is dissolved. Cool and pour over vegetables. Refrigerate overnight.
English Pea-Macaroni Salad
1 6-7 oz. Elbow Macaroni
1 can English Peas
1/4 cup Onion, chopped
1/2 cup Salad Pickles
1/2 cup Mayonnaise
Salt and Pepper to taste
3 boiled Eggs
Cook macaroni, and rinse to cool. Combine macaroni, English peas, pickles, onion and mayonnaise. Gently stir in 2 eggs, that have been chopped up. Slice the third egg and lay on top of salad. Sprinkle Paprika on top. Chill.

I like this spicy version: 1 package frozen baby peas, thawed
1 small can jalapenos (in vinegar)
1/2 bunch of cilantro, chopped
1 large tomato, seeded and diced
3 green onions and/or 1/2 a white onion
chopped
salt (optional)
Drain the peas and 2 or three of the jalapenos. Chop the jalapenos (use these to suit you taste). Combine everything in a bowl, toss and add a tsp or two of the jalapeno juice. Toss and refrigerate. It almost like a pico the gallo, only with peas. Good with cooked nopales (cactus leaf) too.

PEA SALAD
1 can Leseur Baby Peas, drained
1 sm onion chipped
1-2 eggs hard-boiled
Mayo
1 Head of Lettuce
Grated Cheese
Mix peas, onion, & enought mayo to coat and let is set an hour (you don't have to do this, if you're in a hurry, but it tastes better if you do)
Shread the head of lettuce and place in a bowl and add Mayo to cover well.
Next top with the pea mixture.
Then top with chopped boiled eggs
Finally top with grated cheese.
This tastes great & looks pretty too. You can add other indgredients if you want, i.e.olives, green peppers, etc.
Also you can mix it all together if you don't want to layer it.

I know you are asking for pea salad, but here is a great recipe that has peas in it that you might like....
1 lb of pasta shells (small)
1/2 lb cheese (white sharp is the best) cut into small cubes
1 15oz. can of peas (or 1 bag of frozen/ 1 lb of fresh)
3 dill pickles diced
Approximately 1 cup of mayo ( not miracle whip)
3 tbsp of Hidden Valley Ranch dressing
seasonsing to taste (garlic, pepper, bucks, seasoning salt, whatever you may like)
Refrigerate for about an hour before serving.
