How have they held up? Is staining a horrible issue? Polished or honed? Am I crazy to install limestone in my kitchen? Is travertine or slate or marble a better choice?

I have travertine, filled and polished. It does show marks, but they are largely obscured by the natural texture of the stone. Staining, other than by water (spots) has not been a big problem so far in the 3 years since it's been put in. Marble makes it too easy to break things you set down on it. My favorite kitchen counter was a colored concrete that we had in our previous house. That needs monthly waxing, but is a wonderful and durable surface.

I am currently doing a job with Irish Limestone. It is reputed to be harder and more durable.

limestone is NOT the best choice - because it's so porous it would have to be sealed
